We review case studies demonstrating AI's ability to improve dietary adherence, optimize nutrient intake, and enhance overall health outcomes. The paper also addresses challenges such as data privacy, algorithm transparency, and user engagement. Future research directions are proposed to maximize the benefits of AI in nutrition, aiming to promote healthier eating habits and prevent diet-related diseases.
